docs: docker kernel datapath — diagram suite, glossary and refreshed configuration ...

Replace the ASCII art with a mermaid suite (steady-state topology with
namespace boxes and sideband edge semantics, one-way frame path with
per-object boxes, link-creation sequence, full relay path with the four
kernel/user copies), add a term glossary ahead of the diagrams, reflow the
prose to soft-wrap, and refresh the stale parts: the configuration section
now describes enable_kernel_datapath as the global switch it already is,
with every anchorable node type landed and linked to its feature doc.
